makes 6 servings
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/4 cup finely chopped onion
- 2 tablespoons chopped fresh garlic
- 1 cup tomato sauce
- 15 cherry tomatoes, halved
- 1/2 cup chopped green olives
- 1/4 cup deli marinated Italian vegetable salad,
drained and coarsely chopped
- 1 dash black pepper
- 1 dash cayenne pepper
- 1 dash paprika
- 6 (4 ounce) fillets cod fillets
Directions
Warm the butter and olive oil in a large container over
method heat. Prepare and mix fresh vegetables and beans until fresh vegetables
are a little bit soft, being careful not to burn the beans. Add tomato marinade
and cherry tomato fresh vegetables, and bring to a cook. Stir in green olives
and marinated fresh vegetables, and season with spice up, cayenne pepper, and
paprika. Prepare fillets in marinade over method heat for 5 to 8 minutes, or
until easily flaked with a hand. Serve immediately.
