makes 4 servings
- 1/4 cup olive oil
- 2 potatoes, peeled
- 4 slices bacon
- 2 slices cooked ham, diced
- 1/2 onion, thinly sliced
- 1/2 red bell pepper, sliced
- 4 eggs
- 1/4 teaspoon Spanish seasoning
Directions
1. Piece sides off of apples so that apples are
approximately square; very finely slice. Warm the extra virgin olive oil in a
method container over method heat. Add apples and lightly fry. Eliminate apples
with a placed scoop and set aside.
2. Place bread in a large, deep container. Prepare over
medium-high heat until equally darkie Eliminate bread, fall apart and set
aside. Source 1 tbsp bread oil and cook ham, red onion and red pepper.
Eliminate from heat.
3. Beat together egg and Spanish preparing. Add egg into
container with vegetables. Add bread and apples. Prepare over method heat,
without mixing until bottom starts to darkie Turn omelet over and allow both
sides to darkie. Serve warm.
